Happy Friday, y’all! I so hope your week has been enjoyable and wonderful and full of only good things, but just in case it hasn’t (or even if it has), I’ve got a yummy soup recipe for you to try that’s crazy-easy comfort food for your weekend.

Which is why this recipe, using ingredients you probably already have in your pantry is so much better.

It’s actually been decently chilly here this week, so on Wednesday, after waking up to a nippy bedroom (doesn’t that chill make snuggling under the covers feel so decadent?), I just knew it was destined to be a soup day.

And since I’m a Texan, born and raised, my mind immediately went to something full of spicy warmth—Chicken Tortilla Soup.

I couldn’t find my standby recipe, but I’ve made it enough that I decided to try my hand at recreating it, with a twist or two. And the results, according to my husband, were my best yet! (I thought so too; I had to exercise serious self-control and forgo seconds so I could have some left to take pictures for y’all).

Of course, soup is so much better with extras, so I like to load mine up with shredded cheddar cheese, tortilla chips, and even a little cilantro (don’t forget the guacamole on the side!).

  2. When the weather gets chilly, I start craving homemade mac n cheese, baked potatoes, and tomato soup. yummmm Might have to go home and make some mac n cheese after work tonight!
