DAY 1: You’re going to notice a bit of a theme for this week, and it involves the word “skillet.” I hope you’re as okay with that as I am.  We’ll kick it off with this easy breakfast skillet, which has my stomach rumbling just thinking about it.  

And for dinner, this chicken with creamy dijon sauce + mashed potatoes sounds so warming and delicious that I’m fighting the urge to run off and make it before I even press send!

DAY 2: Bran muffins don’t sound exciting. But they are tasty/healthy/easy to make. Plus, grandmas everywhere would approve, and that’s gotta count for something.  It’s hard to beat the cheesy, gooey goodness of lasagna, but make it in a skillet (in 30 minutes too!), and I think you might just have taken it up a notch!  

DAY 3: We are in a church small group that meets on Sunday after church. We all chip in for a potluck brunch, and these yummy cheesy crockpot potatoes are always in attendance. They would be great by themselves for breakfast, but add in some scrambled eggs + bacon, and you’ve got a full hearty meal! Black bean/chicken quesadillas are a great way to use up cooked chicken + readily available pantry supplies. Plus, they are SO tasty!  

DAY 4: I know, I know. Yet another sweet potato hash recipe? Yes. No justification needed. Just, yes.  Also, YES to this chickpea salad. I’d add some shaved cooked chicken for yet more protein, but it’s delish without it too! 

DAY 5: Crockpot steel cut oats are always a good idea when it’s cool and crisp. That’s my story, and I’m sticking to it!  And finally, to round out the skillet-y goodness this week, this Italian chicken skillet is full of color and flavor! 

If you’re wondering about lunches, I don’t provide a meal plan for those because we do leftovers, salads, sandwiches, burrito bowls, and other easy options for our middle meal of the day.
