Day of the WeekBreakfastDinner
Monday Steal Cut Oatmeal Turkey Burgers
Tuesday Granola + Fruit Turkey Lasagna
WednesdayBagels + Cream CheeseTurkey Patties + Rice
ThursdayEggs + Bacon Sausage + Veggie Sheet Pan
Friday Breakfast Quesadillas Chicken + Veggie Pasta
Remember: I only provide 5 meals a week because that’s how many I cook here
(Date night when my kids cook + leftover night are the other two).

DAY 1: If you don’t have an Instant Pot yet…why the flip not? I’m not a gadgety girl, but this one contraption has revolutionized my mealtime mojo more than any other. This foolproof steal cut oatmeal recipe is just one use of the mighty Instant Pot.

Turkey burgers + sweet potato fries (I like that recipe, but I use garlic powder instead of fresh cloves and cumin instead of chili powser) are a STAPLE in our house. Easy, fast, healthy, and yummy. BOOM.

DAY 2: Remember: We love Bear Naked Fruit and Nut granola around here. Throw in some blueberries, strawberries, and some nectarine chunks + some whole milk, and you’re golden.

This is actually the recipe for my turkey lasagna, but the sauce base before you layer the cheese + noodles is my spaghetti sauce. We serve it over angel hair pasta. So delish! Also, my daughters have been making these one hour dinner rolls, and they are so good!

DAY 3:We like Dave’s Killer Bread Organic bagels, and this homemade cream cheese spread is fantastic!

Okay, I thought about typing out my actual “recipe” (which is ever changing) for this dish, but then I found this similar one online and thought it was a better bet since it has actual amounts written out (which is much more precise than the “pinch of this and a glop of that” I was going to offer). When I make our version of this dish, I use a ton of sliced onions in place of the mushrooms and sour cream in the place of the yogurt. We serve the sauce + the turkey patties over jasmine rice.

DAY 4: I’m going to assume you do not need a recipe for scrambled eggs + bacon, yes?

Sausage + veggie sheet pan meals have quickly become one of our family’s FAVORITE easy weeknight meals. My kids gobble this, no matter what veggies I include (we’ve done squash, carrots, brussels sprouts, bell peppers, potatoes, onions, and more).

DAY 5: Breakfast quesadillas may not be the healthiest thing you may make all week, but they’ll probably be near the top of everybody’s favorites.

Chicken + veggie pasta is always a hit at our house. This one is SO fast. I probably wouldn’t try to reinvent the wheel and would serve the same dinner rolls from above and more salad, just like I did with spaghetti because–psssttt, lean in close–kids don’t mind when you serve similar things as long as they’re still good.

If you’re wondering about lunches, I don’t provide a meal plan for those because we do leftovers, salads, sandwiches, burrito bowls, and other easy options for our middle meal of the day.

And there you have it, folks. Another week, another meal plan you didn’t have to make.

I love hearing from you guys!
