Remember: I only provide 5 meals a week because that’s how many I cook here
(Date night when my kids cook + leftover night are the other two).

DAY 1: I’ve included this before, but it really is hard to beat the wholesome (and satisfyingly sweet) goodness of peanut butter, honey, banana toast for breakfast. 

 And the deliciousness just keeps coming with a dinner of fish tacos with a creamy lime sauce and lots of fresh toppings. We had these for dinner tonight, and they were legit! 

DAY 2: It’s hard to go wrong with a classic egg casserole for breakfast. 

And if you’re ever in need of a vegetarian option for dinner, lentils are the way to go–packed with protein, nutrient-dense, and filling, they make for a great meat replacement and help this vegan lentil stew to stay super hearty sans meat.

  DAY 3: If you find yourself craving brunch but don’t want to shell out $11 for one piece of avocado toast, make your own! 

I love how versatile this taco casserole is. You can toss in practically anything you’d like, and, with a base of taco meat, chips, and cheese, it will still taste delicious! 

DAY 4: I needed something quick to take to our small group brunch after church the other day, and I “came up” with these banana Nutella quesadillas after rummaging through the pantry for last minute possibilities. I’ve included a linked recipe in case you need specific directions, but they are really easy to make and absolutely scrumptious–especially when you go the extra mile and brush them with butter, then dip them in cinnamon sugar. Definitely a special treat! 

As are these stuffed bell peppers!

 DAY 5: I had an egg pizza similar to this one when I was in Pennsylvania a couple of weeks ago, and it was DEEEE-LISH! 

And for the end of the week, let’s keep it simple with Bacon, Lettuce and Tomato Sandwiches with some fresh guac and chips (our favorite chip brand is On the Border). 

If you’re wondering about lunches, I don’t provide a meal plan for those because we do leftovers, salads, sandwiches, burrito bowls, and other easy options for our middle meal of the day.
